Corn Dip Recipe

Happy Friday, friends! 

It’s my last day of school before Christmas break, and that’s always a good day. 🙂 I hope all of my fellow teachers (and my students) have a great time off of school and are truly blessed this Christmas. 

Who’s having a holiday gathering soon? Or at least attending one? If you do, I’ve got a super simple appetizer for you to prepare. What’s more? You can make it the night before! (Praise hands)

The first time I had this corn dip was when my mom and dad came to visit us in Louisiana. She and my dad have a mean snack game when they take long road trips, and this dip was one of them on this particular trip. If I’m being honest, I didn’t have high hopes and didn’t really want to eat it. Mom convinced me, and I was pleasantly surprised. It doesn’t exactly look the most appetizing because it looks like corn and cheese in runny mayonnaise, and I’m not a fan of mayo. But once you take that first bite, you’ll keep coming back for more. (Can’t even taste the mayo.)

I recently made it to carry to a football watching get-together, and it was well received. Then Paul and I ate the leftovers the rest of the week for snacks. It keeps well for a while and really is delicious. The Ranch gives it a nice zing that you just can’t get from anything else. 

Recipe

Ingredients

  • 1 15oz can corn, drained
  • 1 can Rotel
  • 8oz sour cream
  • 1 cup mayo
  • 2 cups shredded cheddar cheese
  • 2-3 tbsp chopped jalapenos 
  • 1 package dry Ranch dressing mix

Directions

Mix all ingredients in a large bowl, cover, refrigerate overnight, serve with tortilla chips or Fritos Scoops.
