Mama’s Taco Salad

I’ve got a delicious recipe for you that I’ve been eating for most of my life and making for Paul and I for most of our marriage. We’ve changed it up here and there because it’s such a customizable recipe, but the basis is always the same. My mom’s the one I got the recipe from, so she gets all the credit for the deliciousness. It’s the simplest weeknight dinner and a delicious alternative to tacos.

I love tacos, and we eat them often. We love all kinds, but when we’re tired of tacos, we’ll opt for this salad. The recipe will be the basic recipe we use, but at the end I’ll give you the easy ways we like to mix it up.

Recipe

Ingredients:

  • 1 pound ground meat
  • 2 tbsp taco seasoning
  • 1 head of iceberg lettuce
  • shredded cheddar cheese
  • diced tomato
  • salsa of your choice
  • mayo
  • Doritos
  • sour cream

Directions:

Brown meat in a skillet and drain excess fat

Add 3/4 cup water and 2 tbsp taco seasoning (I use this one– Not technically a taco seasoning, but it’s delightful.) Bring to a boil and turn to low heat to simmer about 8 minutes.

Meanwhile, wash, dry, and chop lettuce and tomatoes and grate the cheese

Mix the dressing- I usually do this just by eyeballing it, but I mix mine with one part mayo and two parts salsa. I’m not too keen on the mayo, so I like to make sure there’s plenty of salsa to counteract the mayo flavor.

Assemble your salad in a big ol’ bowl with all the salad ingredients, top with crushed Doritos, dressing, and sour cream

Customizable Options:

  • Meat choices: ground beef, ground turkey, ground chicken (or shredded), ground venison (the way we’ve been eating it lately)
  • We usually use iceberg lettuce but any lettuce is fine.
  • Additional toppings: corn, black beans, pinto beans, jalapenos, avocados, or pretty much whatever you darn well please
