I made this dessert recently and tried it out on some of our friends because they don’t mind being the guinea pigs when it comes to cooking. The last dessert I took to their house was the Butterfinger cake I shared back in December. Our friend’s response was that he might even like the fruit pizza better than the Butterfinger cake. That’s saying something since he really likes that cake. I promised this recipe back in the summer when I posted about my original fruit pizza, so here you go.
Originally, I had planned to use a snicker doodle cookie as the base, but for some reason no one in Greenville had a snicker doodle cookie mix in stock. I decided to try a sugar cookie mix and just added in some cinnamon to it and called it a day.
I knew I wanted to use apples for a fall fruit pizza and pecans and caramel to top it off. Y’all, it’s so good. Like most fruit pizzas, this one is best the day that you cook it but will last a day or two in the fridge before it all starts to get soggy.
Fall Fruit Pizza Recipe
Ingredients
Sugar Cookie Mix (Or Snicker Doodle Cookie Mix)
1 tsp Cinnamon
1 Large Red Delicious Apple
Pineapple Juice (canned)
Caramel Dipping Sauce
8 oz Cream Cheese (softened)
7 oz Marshmallow Creme
Chopped Pecans
Directions
1. Follow the cutout cookie preparation steps
2. Add 1 tsp cinnamon to the dry ingredients
3. Roll out onto a baking sheet/stone or round pizza pan/stone
4. Bake cookie according to package (May need to add a few minutes due to baking one big cookie. I had to almost double the time.)
5. While cookie bakes mix together the softened cream cheese and the marshmallow creme with a mixer until smooth. I put a dash of cinnamon in here too, but I think it could have handled two dashes. Just one dash is not intense at all. Set aside. (Can make this ahead of time and store in fridge until ready to use.)
6. Slice apples into thin slices and immediately put into a bowl of pineapple juice to keep them from turning brown.
7. Once cookie is cooked, let it cool completely.
8. Once cooled, spread cream cheese/marshmallow cream mix on top of cookie.
9. Lay apple slices in three rows
10. Drizzle with caramel sauce
11. Sprinkle pecans on top of apples
12. Top pizza with a dusting of cinnamon
As always, I look at a recipe as something to make my own. I think any kind of apple would be delicious on this pizza.
I also think you could substitute caramel for honey.
Walnuts would be great in place of the pecans.
Definitely a proper snicker doodle cookie recipe instead of a doctored up sugar cookie recipe.
