Amy’s Salad Recipe

I have a wonderful recipe for you today. It is a crowd pleaser and would be perfect for your Thanksgiving menu. I always go back for seconds and thirds when I have it. Back in 2008 my Mama gave me a cookbook called The Blue Willow Inn Bible of Southern Cooking. This recipe comes from there.

Ingredients:
1 head romaine lettuce
1 bunch broccoli, chopped
4 green onions, chopped
4 teaspoons butter
1 cup chopped English walnuts
1 package Ramen noodles

Dressing:
1 cup vegetable oil
1/4 cup red wine vinegar
1 cup granulated sugar
1 tablespoon soy sauce

Directions:
In a large bowl place the lettuce, broccoli, and green onions. In a skillet on low heat melt the butter. Brown the walnuts and noodles in the melted butter. Remove from the heat and allow to cool. When cool, pour the mixture over the lettuce mixture and toss.
In a small saucepan on low heat mix the vegetable oil, vinegar, sugar, and soy sauce. Stir over low heat until the sugar is dissolved an the mixture is warm. Pour over the salad just before serving.
Yield: 10-12 servings
