Paul and I have been on a low carb eating plan since August. Now, over the holidays that train derailed a bit, but we’re getting back into the swing of things. We’ve found a few recipes that we cook on the regular, and I thought maybe you’d like to see some low carb options, too. Today’s recipe was introduced to me by my mom. She handed me a container of it one random morning I had to take the dogs to her house, and I ate it for lunch. Goodness, it was good! I immediately asked for the recipe, and I cooked it myself for the first time last week. It is delicious and filling and low carb. Let’s talk about how to make it.

The original recipe is from It’s Simple by howtothisandthat.com. There is a plethora of low carb and keto recipes on this website, and I’ve already found several that I’d like to try.

Don’t worry. It’s adaptable.
I’m telling you….it’s as if the universe didn’t want me to make this casserole. But where there’s a will there’s a way, and sometimes you just have to improvise when things don’t go according to plan.
I believe that’s a life lesson right there, folks.
There were no onions to be had in the grocery store (#supplychainissues), and the red bell pepper I bought was moldy on the inside when I cut it open. I had a can of Rotel, so I threw that in with the green bell pepper and called it a day. The recipe also calls for chicken breasts, but I bought chicken thighs, so I used those instead. Didn’t seem to make a difference in the taste. I suppose you could use any type of meat you wanted: ground beef, venison, turkey, rotisserie chicken, leftover chicken, etc. It would probably just alter the nutritional facts of the original recipe. Also, the recipe calls for cooked chicken, so I boiled mine and shredded it to go into the casserole.
What Should I Serve With It?
At the beginning of our low carb journey, Paul and I started eating salads before every meal. It helps us to fill up on something healthier and therefore eat smaller portions of the main course. That’s what we ate with ours. A simple side salad can do wonders. I also think some roasted or steamed veggies would be great alongside this casserole.
